It’s #nationalcheesepizza day and a college football gameday 🧀🍕🏈🏟️

One of my favorite gameday eats is these easy peasy English muffin pizzas 🙌 Fit for one or a party, gets everyone involved in the kitchen to allow for customizations, and perfect to reach any dietary or macro nutrient needs for the day!

I love adding all the veggies to mine and fresh mozzarella 🙌

Use an English muffin or even a bagel works great of your choice! I tend to do whole wheat, sourdough ( I miss my Publix greenwise sourdough English muffins from the south) or gluten free bagel thins. Sauce is usually @primalkitchenfoods or homemade. Cheese depends but I gear towards @belgioiosocheese @stewleonards @sargentocheese or @traderjoes

Busy weekend spent working, but oh my was it so fulfilling ☺️ Boot & caffeine in tow, meal prep for accountability, dancing because food gives us energy to be lively/joyful, and the only thing left harmed were my glasses. ( so please excuse my squinting until after Columbus day weekend because I may as well just wait for a new prescription at this point.)

May not have actually made it over to playa bowls today for national playa day. But I def need to get a bowl again soon especially since I had a new order prepped to try😍 I loved the cocoberry cloud they had in April since it already came with protein in it & had a spirulina coconut blend ( that I shockingly loved).

What’s your go-to PlayaBowls order? I love the oatmeal #2 option ( slept on), but I was thinking of doing 1/2 stupid cupid base ( underrated… and need more options with that blend) with 1/2 açaí topped with kiwi, strawberries, blueberries & some type of protein/collagen mixed-in! ( I tend to not add granola to mine or choose to add my own protein cereal/ @oat.haus later!

New food finds, colorful plates, cottage cheese, and creativity is kinda my vibe 🥰

Finally got around to trying @littlespoon and I love these chicken & veggie sliders as a way to get in some protein & extra vegetables in my day. Raw veggies may not be everyone’s thing, but I LOVE bell peppers as a snack. The @traderjoes frozen asparagus is one of my must have stocked at all time products. And obviously I’m clearly addicted to @good_culture cottage cheese, @goodfoods avocado salsa & my new find or @clevelandkitchen mayo-free coleslaw. ( literally eat most the container before I plate meals tbh)

What a beautiful messy blissful week. The hustle and bustle of a new year fulfills my soul, the opportunity to seek lightbulb moments 💡from others, the busyness of the grinding schedule is my vibe always and the opportunity to build a team full of respect, love, work ethic, and quality is a challenge that excites me.

While something’s were blissful, there’s always self-doubt about being/doing enough to accomplish the visions at-hand. And we had some medical disappointments to end the week personally, but as always we rise, we preserve, and we always shine our light 🌟

Cheers to an even busier & exciting week ahead and I’m so excited to meet even more of my students, build lastful memories, and create positive impact ❤️ Because at the end of the day.. I just want to be able to reflect and say I did everything I could, I made an impact positively on someone, and there’s a beautiful day ahead of us tomorrow 🥰
