Mini Blueberry Jam Muffins

Bringing you the most perfect mini muffin treat for national blueberry month. Make it little bites copycat, but healthier with benefits of superfoods and real fruit.
The secret ingredient you may ask? Blueberry Superfood Jam from Smash Foods. I’ve been obsessed with adding this ingredient into my protein ninja creami’s, pancake mixes, and cottage cheese toast to seek the benefits from ingredients like chia seeds and dates.
When GoNanas launched their little bites collaboration earlier this year, I knew I had to hop on it and be creative with it to bring my own mini twist.
What you need:
1 single serving packet or 2 tbsp of Smash Foods Blueberry Superfood Jam
1 packet of GoNanas Mini Banana Blueberry Mix (Code KatieKreates for 20% off)
2 tbsp of Greek Yogurt
1 tsp Vanilla Extract
280-300g of Bananas
To start, preheat the oven to 350°F (175°C) and spray your mini muffin tin/use liners. I actually experimented with this spray and used the baking spray from Chosen Foods made with avocado oil, but a girl also uses PAM all the time.
Grab a small bowl and mash your 3 bananas with a fork until smooth consistency. I suggest using about 280-300g of banana in this recipe.
Add your bananas into a medium size bowl to begin putting together all of your wet ingredients. You’ll want to take two heaping tbsp (50g) of Greek yogurt. Any Greek yogurt option should be sufficient. I’ve done it with the nonfat plain from Trader Joes, Dannon Oikos Triple Zero Nonfat Vanilla and Too Good Vanilla Greek yogurt. It truly just depends on what I have available.
Now it's time for the secret ingredient of the Smash Foods Blueberry Superfood Jam. I used one single serving packet and added 1 tsp of vanilla extract to the mix. Whisk all these ingredients together.
Once the ingredients are mixed slowly stir in 1 packet of GoNanas mini blueberry muffin mix.
Once all your ingredients are mixed, take a spoonful into each mini muffin pan. Recipe makes 30-38 mini muffins. Bake for 15-20 minutes, cool down, and enjoy!
Since these have no artificial ingredients I recommend storing them in the fridge or even freezing some when you're in a rut.. But they probably won’t even last that long because they are TOO good.
