Pumpkin Muffins & Protein Frosting

Who says you need bananas when using banana bread mix? Canned pumpkin in recipes has been a go-to hack for me for years when it comes to substituting oil in recipes. Not only does it provide a lighter option it’s also packed with fiber and vitamins to add more nutrients into your day. The recipe is super easy, as allergy-friendly as it gets, and uses minimal ingredients. 




Muffin Ingredients: 

  • 1 package GoNanas frosted pumpkin loaf banana bread mix

  • 1 tbsp maple syrup

  • 1 cup canned pumpkin

  • 2 tbsp vanilla extract

  • 2 tbsp water


Frosting:

  • 1/4 cup canned pumpkin

  • ¾ cup Greek yogurt

  • ½ scoop Iconic Protein Powder (or protein powder of choice) 


For the muffin base all you need is GoNanas Frosted Pumpkin Loaf Banana Bread Mix, Canned Pumpkin, Pure Maple Syrup, Water and Vanilla Extract.


To start, whisk together the 1 cup of canned pumpkin, 1 tbsp of pure maple syrup, 2 tbsp of water, and 2 tbsp of vanilla extract. Once combined, slowly stir in the frosted pumpkin loaf banana bread mix package.


Now, you can also make this recipe with the other flavors of GoNanas. It just won’t be as pumpkin-ey, but it will be just as good.


Preheat your oven to 350 degrees. Pour the batter evenly into a muffin tin of 12 and bake for 25 minutes. 

While baking the muffins, you will want to make my famous Pumpkin Protein Fluff for the Frosting. Obviously, it's an optional addition, but it’ll only elevate the deliciousness.


I tend to frost them as I eat them rather than frosting them all at once. 


The Pumpkin Protein Fluff Topping, which I tend to eat for breakfast most days, is also super easy to make with three ingredients required. You will take approximately ¼ cup of canned pumpkin, ¾ cup of greek yogurt, and ½ scoop of protein powder.

 In a small bowl stir together the Greek yogurt, protein powder and pumpkin. Store the frosting in the fridge upon making it. 


My go-to greek yogurt is the Too Good Vanilla Greek Yogurt and I love Iconic Protein Powder for most of my recipe needs.


Once your muffins are done, you can frost them with this topping and enjoy! I love this recipe for meal prep breakfast/snacks and dessert bowls! It’s super nutrient dense and also easy to freeze.
